Add yeast to bowl with warm (but not too hot water). Let sit for 10 minutes until foam cultures form at surface. 2. Place flour in large mixing bowl. 3. Beat eggs separately, add to flour with yeast, wine, and sugar. Mix just enough to spread evenly. 4. Add remaining ingredients salt and mazola/corn oil. Incorporate dough. 5. If the dough is dry, wet with additional wine. The dough will be sticky. Kneed over lightly floured surface. 6. Let rise, in warm area (covered in blankets if necessary). Dough will double in volume at least two hours, likely 3-4 hours. 7. Once dough is ready, bring frying oil to temperature in large pot. Zeppoli should take about 1-2 minutes to fry, achieving a golden brown exterior with a fully cooked center. ## Notes - For anchovy or cheese filled zeppoli do not include sugar into the dough. - The oil added to the dough helps the dough crisp while frying
